My Spicy Winter Casserole

This recipe was pulled out of a store magazine and with a bit of a twist, I made it mine. The good old casserole is a pleasure in most homes during winter. It is not only easy to pull together, it is worthy of every time spent cooking it.

I used potatoes, parsnips, carrots, red onions, kidney beans, chopped tomatoes and chicken, however, this recipe could be easily adapted to your taste. Adding a mix of bell peppers would balance the taste and texture. (more…)

My one-pot chicken and rice dish

One of the foods I  often cook is rice. My One-Pot Chicken and Rice dish is one of the easiest. It is easy to cook and just anything could be added. I used loads of peppers. Peppers are known for their abundance of vitamin C.

Peppers have Vitamin B6 and folates. Red peppers have been praised for aiding night vision. Red peppers have loads of antioxidants. To top it all, red peppers help in burning more calories.

Apart from red peppers, I used onions, chilli, mixed herbs and chicken of course. Just like I said earlier, this recipe is easily adaptable, it is what you make of it.

Healthy High Protein Meatza.

Eating healthy does not need to cost the earth. This recipe is easy to make and healthy. It is a cross between meat and pizza. This is a high-protein dish. It is also delicious and consuming high protein has been proven to help the body metabolism.

Making this recipe is fun and you can decide what topping goes on your meatza. I opted for bell pepper using all the three colours available. I love peppers, so let your love show through the toppings you choose to use. (more…)
