My Spicy Winter Casserole

This recipe was pulled out of a store magazine and with a bit of a twist, I made it mine. The good old casserole is a pleasure in most homes during winter. It is not only easy to pull together, it is worthy of every time spent cooking it.

I used potatoes, parsnips, carrots, red onions, kidney beans, chopped tomatoes and chicken, however, this recipe could be easily adapted to your taste. Adding a mix of bell peppers would balance the taste and texture.

You can also try another source of protein. I used chicken thighs, but, there is nothing wrong experimenting with fish or omitting the animal protein totally. I chose winter vegetables for their goodness and adaptability. The nutritional value of all these vegetables helps keep me going in the winter months.

The traditional snuggling on the sofa in front of the television won’t be complete without a delicious winter casserole. To make your winter vegetable casserole, here’s what you need.

Chicken thighs
1 red onions
700g potatoes (peeled and chopped)
4 carrots ( peeled and sliced thickly)
2  medium-sized parsnips (peeled and sliced thickly)
3 garlic cloves ( peeled and chopped finely)
1 litre of water
Seasoning cubes (optional)
1 tin of red kidney beans (350g when drained)
1 tin of chopped tomatoes (400g)
Pepper ( to your taste)
Fresh coriander
Olive or sunflower oil

In a large pan, fry chicken thighs in some oil until brown. Turning the chicken will aid cooking and browning. Add your chopped onions, garlic and herbs. Sauté the mixture for a few minutes stirring occasionally.

After about  2 minutes, add water, stock cubes (if using), potatoes, carrots, parsnips and chopped tomatoes. Season with salt and pepper to your taste and bring to boil. Add kidney beans and continue to cook.

Turn the heat down after adding kidney beans, cover up and cook for 30/40 minutes, until the chicken is cooked and vegetables tender.

Serve topped with a handful of chopped coriander with bread and yoghurt if you prefer. I enjoyed eating mine just as it showed in the picture.

    Looks good I'm not fan of any kind of beans so I'm gonna leave that part out but other then that sounds great I'm gonna try it thanks xx
