My Easy Cook Mediterranean chicken

My easy-to-cook Mediterranean chicken. I really don’t care what this dish is called, but, it is a winner for me. I often cook it when I can’t think of what else to cook. It does not require a lot of attention and it is delicious. What’s more? Anyone can cook it! Though there are many version of this dish, I rediscovered the dish one evening when I could not be bothered about dinner. I dumped whatever I could find into an oven dish and my easy cook Mediterranean chicken was born. The preparation time is less than 10 minutes. This dish is healthy and filling. If you considering losing some weight, this is the dish to indulge in.

I used chicken, but, the truth is any type of meat could be used and the same apply to the vegetables. You can also experiment with fish. This dish is truly your cup of tea, it all depends on how you want it.

 

Here’s how to make it.
Ingredients:
Chicken thigh
Peppers (red and yellow)
Chestnut mushroom
Babycorn
Mixed herbs
Peppercorns
Red onions
Soy sauce (Optional)

Preheat your oven to 200 C F. Clean your chicken thigh. Clean your choice of vegetables. Chop your vegetables roughly. Place your chicken first in the oven dish, casserole dish or any oven proof container which can hold all the ingredients. Next, add all the vegetables, season with mixed herbs, peppercorn, salt and a dash of soy sauce (optional). Mix your all the ingredients together. Place in the oven and allow to cook. It might take between 35 – 50 minutes to cook.
Make sure the chicken is fully cooked.

Put your oven gloves on. Take your cooked dish out of the oven. Leave to rest for about 5 minutes. Serve and enjoy. This dish can be eaten alone, but, I had mine with boiled rice.
